Cheryl’s Pickled Asparagus

Per Jar [litre]

  • ½ cup vinegar
  • 1 tblsp pickling salt
  • 1 tsp dill weed
  • 1 large garlic clove
  • 1 whole red chili pepper

20 pounds of asparagus makes 12 quart jars.

  1. Par boil asparagus for two minutes. Submerge in cold water to stop cooking action.
  2. Place asparagus upright into jars along with other ingredients.
  3. Fill with boiling water.
  4. Place jars in shallow pan with water in it and put in oven at 325 degrees for 15-20 minutes to seal.
  5. Enjoy!!
